The highest grade is Extra Virgin Olive Oil (EVOO) which is the first press. Pomace Oil is produced by a process of extracting olive oil from the pulp of fresh olives. It is a natural blend of refined olive oil and extra virgin olive oil. Pomace oil can stands heat hence its suitable to be used for cooking & baking.
